Description: 

Very complex. Layers of vanilla, apple, sherry, oak and cognac. Oak presence is pronounced for a brandy, but perfectly balanced with the apple. Considering the high proof level (90), this is not hot when enjoyed straight. Multiple barrel types contribute to complexity (new charred oak, used toasted oak, cognac barrel, used wine barrels). Also, this batch was harvested at an incredibly low average proof of 92%, so almost no dilution was needed.
